During the event, the ELLESU catering team worked for six hours, from 6 pm to 1 am, according to the case study - which involved setting up the necessary stations, serving food, managing the buffet throughout the event, and maintaining the health of the dishes.
Working closely with Ukpor Union's vice president and event planners, ELLESU assembled a team of 10 service staff to cater the event. Through detailed discussions in the planning stages, they offered menu recommendations tailored to the ceremony and venue while working within the client’s budget.
The ELLESU team explains that it prides itself on resourcefulness in overcoming challenges, even when they arise at the last minute - as happened with this event. While an unexpected traffic delay pushed back the service by 10 minutes, the experienced ELLESU team swiftly adapted their schedule and provided packaged meals so guests could enjoy leftovers in the days following the celebration.
According to the team, their signature Jollof rice and the sweet, peppery moin moin were among the favourites - helping to create a buzz after the ceremony ended. The case study shows how each dish prepared, from the fried chicken to the bitter leaf stew, underscored ELLESU's focus on creating a memorable culinary experience.
While best known for event catering, ELLESU also offers delivery of frozen Nigerian dishes twice per week. Customers can choose to receive orders on Tuesdays and Thursdays or, if they’re based in London, Fridays and Saturdays in addition.
